Maple Banana Walnut Scones

Ingredients

Scones

  • 1/4 cup banana, mashed (~1 medium banana)
  • 1/4 cup milk of choice
  • 1/8 cup maple syrup
  • 2 tsp apple cider vinegar
  • 2 1/4 cup oat flour
  • 1/4 cup cornstarch
  • 1/8 cup light brown sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp cinnamon - optional
  • 1/4 tsp salt
  • 1/4 cup walnut butter *
  • 1/4 cup walnuts , chopped

Glaze

  • 1/2 cup powdered peanut butter
  • 1 Tbsp powdered sugar
  • pinch of salt
  • 2 Tbsp maple syrup
  • 2-4 tsp water

Instructions


  1. Preheat the oven to 375 F and line a baking tray with parchment paper.
  2. For the scones: in a medium sized bowl, mash the banana (with the back of a fork or your hands). Add the milk, maple syrup, and apple cider vinegar. Stir to combine and set aside.
  3. In a large bowl, whisk together the oat flour, cornstarch, brown sugar, baking powder, cinnamon, and salt.
